Jack Frost is getting ready to jack up your warm Summer evenings, but there isn’t a blizzard that a big bowl of comfort food can’t cure. We’re talking about the classic, Corned beef and cabbage. Martha Stewart doesn’t know the first thing about making this like a man–so, we’re here to fill in the gaps. Here’s what you’re going to need.
- 1 corned beef brisket
- 2 celery stalks, cut into pieces
- 3 carrots, cut into pieces
- 1 small yellow onion, cut into wedges
- 12 (or so) small potatoes
- 1 bay leaf
- dash of thyme
- small cabbage, cut into wedges
- 1 can of beer (leave one for yourself)
Sure, you could spend all day making this in an iron pot, but if you have a crock pot, all you’ll need is a sharp knife, a few ingredients, and something to do for the next 5 to 10 hours. Set up your 5 to 6 quart slow cooker, and adjust to high if you want to eat in 5 hours, and low if you won’t be ready to eat for closer to nine hours.
Cut up the celery, carrots, and onion, and place in the pot. Throw in one bay leaf, and a dash of thyme. Take the corned beef brisket, place it fat side up on the pile of vegetables, and add the seasoning from the spice packet that came with it. Crack open a beer, and pour over the beef until it is almost covered. Now let it cook 4.5 hours on high (or 8.5 hours on low).
When the time is up, chop up a small cabbage into wedges, place on top of the beef, and cook for an additional hour. When the cabbage is tender enough to melt in your mouth, take it out and put in a tall dish with some vegetables, beer juice, and a few slices of meat. Now you’re a man. Eat, drink, and get yourself some sexy Mary.
